It's getting that time of year that many of us are having office potluck dinners to celebrate the holidays. You know who it goes, the boss sets up a potluck, the list goes around and you have no idea what to bring. You want to bring some good but you don't want to spend a whole lot of time making something but you don't also don't want to just go buy something and throw it on a pretty plate. Here are a few quick and easy recipes you take to the office, that everyone will love.

I do have to tell you when I make something I don't measure anything. I am one of those old fashion cooks where you put a little of this and a little of that. So some of these I will give you ingredients for and do my best to tell you how much to put in it .

1. Cauliflower Salad.:

1 head of cauliflower, frozen peas, shredded cheese, red onion, real mayo, bacon bits (optional)

chop the cauliflower, mix with a cup of mayo, a cup of frozen pea, half a cup of chopped red onion, and some shredded cheese.  Mix together and let sit overnight. Cover the top with shredded cheese before serving. My family likes to add bacon bits on top but you know me, I don't like bacon, so I don't.

2. Christmas Salad.

Broccoli, cauliflower, red onion, cherry tomatoes, mayo, sour cream, sugar

chop broccoli and cauliflower into florets, thinly slice the red onion, cut the cherry tomatoes in halves. Mix in 1 cup of mayo, 1/2 cup of sour cream, 1 tbsp of sugar

2. Pizza Dip

cream cheese, spaghetti sauce, pepperoni, mozzarella

This is the easiest thing ever. Cover the bottom of the pan with cream cheese, cover the cream cheese with sauce, cover the sauce with mozzarella and cover the mozzarella with pepperoni. Bake in the over for about 30 minutes and serve with chips.
